Deep Fried Sardines
10 Fresh sardines
1 1/2 teaspoon chopped chives
1 small onion diced
2 1/2 teaspoon plain flour
2 small eggs
Salt & pepper
Prepare sardines by removing heads, backbone and insides. Wash and dry. Put onion
and chives inside fish. Mix flour, salt and pepper. Beat the eggs. Dip the fish in
flour mixture then dip in beaten eggs, repeat this step. Put fish into hot oil for
4 minutes. Drain and serve.
