Bean and Cheese Nachos
Ingredients
Corn Tortilla Chips
1 can (or jar) refried beans
Grated cheddar cheese
Sliced jalapeno peppers (optional)
Method
Step 1: Lay the chips out on a round pizza tray or baking sheet. Do not allow to overlap.
Step 2: Heat the refried beans in a saucepan. Get them hot, but don't dry them out. Stir constantly.
Step 3: Spread the beans on each individual chip. A spoon seems to work well. Spoon some on and use the back of the spoon to spread.
Step 4: Top each chip with cheese. I like mine with extra cheese.
Step 5: If desired, place one jalapeno slice on each chip
There may be some beans left. Simply refrigerate and save for next time.
Heat under grill until the cheese is completely melted. The tortilla chips should be crispy and warm, but not burned on the edges.
